A Champagne and Fine Food Evening held at 315 this June was heralded a sparkling success with all places selling out almost as soon as they went on sale.

Within a day of sending out an email flagging up the event, 315 had completely sold out of tickets and chef Jason Nielson believes they could have sold places for five or six such evenings based on the interest.

As champagne is not strong enough to marry with food, the tasting was held prior to dinner. A representative of the Champagne Gardet vineyard attended to talk about the production of champagne and 315 was delighted to welcome her for one of only three appointments she had in the UK prior to the forthcoming busy harvesting period.

Founded 1895, Champagne Gardet is based in the Epernay region of France near Reims, producing high-quality champagne often in limited runs. The visitor led the tasting of four different champagnes: a brut white, a vintage white, a pink champagne and a vintage pink champagne.

Guests then enjoyed a two-course meal specially created by Jason for the occasion, comprising poached lemon sole with a white wine and chive sauce, potatoes and leeks. Dessert was mille-feuille with strawberries and cream followed by coffee.

Among the guests were some familiar faces who have already become regular diners at 315 since it opened. The general consensus was that guests had enjoyed the evening tremendously and also learned something new about champagne tasting and production.

The next event at 315 will be a Fine Food and Wine Evening on 5 July, with wine from the Chalk Hill wine company in Australia, which makes small-batch, hand-crafted wines of distinction. Head chef Jason has created a special menu for the event and different wines will be partnered with each course, with viticultural expert Jock Harvey on hand. 315 Bar & Restaurant Opens its doorsThe word unique is often overused, but in the case of 315 Bar & Restaurant, now open in Lepton, there really is nothing like it in the region.

The Grand Opening in April was attended by Chairman of Kirkburton Parish Council, John Hirst, with local Holmfirth artist Ashley Jackson giving a lively speech to the various contractors involved in the project.

Raymond Blanc prodigy, Chef Jason Neilson, has brought his Michelin-star experience to 315. “We came up with the concept of separate dining areas, each with a unique feel and décor. With a restaurant, it’s not a gradual progression like some businesses – you go from zero to 100 miles an hour. You’ve got to make it perfect from the word go. But we’ve done our marketing, we’ve put in the work and we’re in a great setting.”

315 focuses on excellent service, with a dedicated manager for each dining area.

Jason, who once turned down the chance to work for Gordon Ramsay, is taking it all in his stride. “You sometimes see what I call ‘pan shakers’ and ‘helicopters’ – people in the kitchen stressing out and spinning in circles. Maybe I break the mould, but when the pressure is on I tend to have a laugh and a joke and it relaxes everyone.”

The development of the building has clearly been a labour of love and anyone who knew it as the White Horse Inn will be amazed by the transformation. The construction team faced quite a few challenges, from discovering a coal mine beneath the building to erecting a steel frame to support the façade during work.

Architect David Milnes, from ADP Design Partnership, says: “It’s unusual to work on a project of this size in the current climate but I think it will do very well. There’s a real buzz about it in the area.”

Interior designer Joan Webb of JW Design has created a distinctive contemporary feel throughout. Using mostly local companies, such as Harpers Interiors in Kirkburton for the soft furnishings, Andy Thornton in Elland for the furniture and Slaithwaite’s Steel Dreams for the bar racking, Joan even commissioned a local artist Keith Mountain to produce an original painting of Castle Hill as a focal point for the casual dining area.

With spectacular countryside views, 315 is ideal for weddings and several have already been booked through the dedicated wedding co-ordinator. The function room can accommodate around 100 diners or 130-150 at a party and there are eight stylish contemporary bedrooms, including a bridal suite.

“What makes us stand out from other venues,” says Chef Jason, “is that nothing at 315 is standardised: we tailor-make functions to the client’s needs and everything is made in-house, from the bread to chocolates. We’re planning special evenings like a black-tie dinner-dance. You think of that being in Leeds or Manchester City Centre, but there’s no reason why we can’t do it in Huddersfield.”
